THAWING INSTRUCTIONS (if frozen):
(1) No hurry: Leave in bag. Place on tray in refrigerator 2-3 days (about 4 hours per pound).
(2) Faster: Leave in bag. Cover with COLD water 4-7 hours (about 1/2 hour per pound).
(3) Microwave: Remove bag and plastic mesh from turkey (no need to remove plastic leg clamp; it's microwave safe). Place breast side down in microwave-safe baking dish. Heat on medium (50% power) 5 minutes per pound, turning breast-side-up halfway through time. Let stand 10 minutes to finish thawing.
TO REHEAT SMOKED TURKEY:
(1) Microwave: Remove bag and plastic mesh from thawed turkey. Place breast-side-up in microwave-safe baking dish. Heat on medium-high (70% power) 5 minutes per pound or until breast reaches 140 degrees F. Rotate halfway through time. Let stand 10 minutes before carving.
(2) Conventional oven: Remove bag and plastic mesh. Preheat oven to 325 degrees F. Place breast-side-up on rack in a shallow pan. Heat about 6-8 minutes per pound if thawed or 10-12 minutes per pound if frozen, or until breast reaches 140 degrees F. Let stand 10 minutes before carving.
After reheating:
Carve your smoked turkey just as you would any roasted whole turkey. For easy instructions go to "Carving a turkey" under the "How To Tips" menu at the left of this page.
Leftover smoked turkey may be used in most recipes calling for ham, and makes great sandwiches. Go to the "Recipes" section for delicious ideas.
