Crunchy Almond Turkey Roast

(Serves 4)

1 loaf uncut whole-wheat bread
2 cups Norbest Turkey, cooked and cubed
4 1/2 tablespoons margarine
1/2 cup almonds, sliced
2 tablespoon onion, minced
1-2 cloves garlic, minced
2 teaspoons flour
1 cup plain yogurt

Trim end crust from bread. Slice 4 (1 1/2-inch thick) slices. Pull out center leaving about 1/4-inch thick border on all sides including bottom. In a small skillet, melt 1 1/2 tablespoon margarine over low heat. Brush melted margarine into hollow and around edges of whole-wheat shells. Toast shells until lightly browned. In a 2-quart saucepan, melt remaining margarine over medium heat. Add onions and almonds; stir and cook until both are lightly browned. Stir in garlic and flour; cook, stirring constantly until thickened. Remove pan from heat. Fold in yogurt and Norbest turkey; return to heat. Cook until meat is warmed through. Spoon mixture into toast shell. Garnish with parsley. Serve with green vegetable or salad.
