Veggie Turkey Frittata

(Serves 6)

I N G R E D I E N T S
1 cup each chopped onion and red pepper
1 tsp minced garlic
3 tsp olive oil
1/4 lb mushrooms, sliced
1 medium skinned potato, cooked and cubed
1/2 tsp each dried rosemary, pepper, and salt
1 cup cooked asparagus, cut into small pieces
2 cups shredded cooked Norbest turkey
4 eggs, beaten
1/4 cup Parmesan cheese

D I R E C T I O N S
In large oven-safe skillet, over medium-high heat, saute onion, red pepper, and garlic in olive oil 3-4 minutes or until onions are translucent. Add mushrooms and potato. Saute 1-3 minutes or until mixture is heated throughout. Reduce heat to low. Stir in rosemary, pepper, salt, asparagus, turkey, and eggs. Mix well. Cook 10-15 minutes or until mixture is lightly browned and set on bottom. Sprinkle Parmesan cheese over top and set under the broiler 3-4 minutes or until cheese is lightly browned.
