An easy turkey salad sandwich, perfect for using up leftover holiday turkey. Add crunch and flavor with celery, apple, and green onions.

 

INGREDIENTS

  • 1- 1/2 C diced cooked turkey
  • 1/2 C diced unpeeled apple
  • 1/2 C mayonnaise or salad dressing
  • 1- 1/2 tsp curry powder
  • 1/4 tsp ground ginger
  • 1/4 tsp pepper
  • 1 med stalk celery, chopped (1/2 cup)
  • 2 green onions, chopped (2 Tbls)
  • Optional: handful of dried cranberries
  • 8 slices whole grain bread

 

DIRECTIONS

Option 1: You may toast the bread for an extra crunch.

Option 2: Skip the bread altogether and serve on lettuce leaves. 

  1. In med bowl, mix all ingredients except bread. 
  2. Spread turkey mixture on 4 slices of bread. Top with remaining bread.
