A healthy twist on the taco you know and love. You and yours won't taste the difference with this Mexican dish and you'll feel better about the nutrients. Packed full of protein and leaner than beef, these turkey tacos will shine as an addition to the dinner rotation.

Servings: 4 

 

Ingredients:

  • ¾ lb. ground turkey
  • 1 med. onion, chopped
  • 2 Tbl. olive oil
  • 2 garlic cloves, minced (1 tsp)
  • 1 jalapeño pepper, seeded and minced (optional)
  • 1 ½ Tbl. chili powder
  • 1 tsp. ground cumin
  • Salt and pepper (to taste)
  • ¾ C. canned chopped tomatoes
  • 1/3 C. chicken broth
  • ¼ cup fresh cilantro, finely chopped (optional)
  • 12 (5 inch) corn or flour tortillas
     

Topping Suggestions

  • Romaine lettuce, thinly sliced
  • Tomatoes, diced
  • 1-2 Avocados, diced
  • Monterey Jack cheese, shredded
  • Sour cream

 

Directions:

  1. In a medium skillet over med. heat add oil, onions, garlic, jalapeno, chili powder, cumin, salt and pepper. Stir until the vegetables are tender, around 10 minutes.
  2. Increase heat to med.-high and add tomatoes. Boil for 2 minutes.
  3. Add turkey and chicken broth, bring to a boil.
  4. Reduce heat and simmer until the turkey is cooked through and the mixture thickens, about 12 minutes. Add optional cilantro.
  5. Construct tacos as desired.
