Mashed Sweet Potatoes with Goat CheeseServes 10-12
4 pounds sweet potatoes (not yams), peeled and cut into large chunks 8 ounces goat cheese with herbs 2 tablespoons packed light brown sugar 1/4 teaspoon salt
1/4 teaspoon ground nutmeg Warm milk
Southern-style sweet potatoes with tangy goat cheese.
Place potatoes in large saucepan and cover with water. Bring to a boil. Reduce heat to medium and cook about 20 minutes or until tender when pierced with a fork. Drain.
Beat potatoes while still in pot with hand-held electric mixer or mash with hand potato masher. Add cheese, sugar, salt and nutmeg and beat until cheese is melted and incorporated. If mashed potatoes are dry, add a little milk to reach desired consistence.
