Sopa de Albondigas (Meatball Soup)

INGREDIENTS
• 1 qt. water, lightly salted • 1 lb. Norbest taco seasoned ground turkey • 8 oz. cooked rice • ½ cup yellow onions, diced • ¼ cup cilantro, chopped • 1 egg, lightly beaten • 1 medium zucchini • 1 medium carrot, peeled • 1 red bell pepper • 1 small onion • 4 small red potatoes • 1 qt. chicken broth

DIRECTIONS
1 ) Bring 1 qt. of lightly salted water to a simmer over medium-low heat. 2 ) In a mixing bowl, combine the ground turkey, cooked rice, diced onion, chopped cilantro and the lightly beaten egg. 3 ) Mix to combine. Divide the mixture into 12 equal portions and roll with moistened hands into balls. 4 ) Place the meatballs into the simmering salted water and cook until the internal temperature reaches 165°F degrees. 5 ) Drain the meatballs from the water and set aside. In a soup pot, bring the chicken broth to a simmer. 6 ) Add the carrot and potato pieces to the broth and simmer until the point that a knife can easily be inserted into the potato, about 10 minutes. 7 ) Plate the carrot and potato pieces. 8 ) Add the remaining vegetables and the meatballs to the pot and simmer until the onions are translucent, the zucchini is tender but al dente, and the meatballs are heated through. 9 ) Add back the carrot and potato pieces and serve immediately.
