Turkey Lasagna Americana
A delicious and unique American Flag lasagna recipe for any season!

INGREDIENTS
1 lb. Norbest ground turkey
1 teaspoon olive oil
1 red onion, finely chopped
1 cup chopped mushrooms
2-1/2 cups marinara sauce
2 cups fat-free cottage cheese
1 pint fat-free ricotta cheese
1/4 cup Parmesan cheese

2 eggs
16 ounces boiled lasagna noodles*
8 oz. part-skim shredded mozzarella
For the topping
½ cup Black olives, chopped

DIRECTIONS
Directions:
- In a large pan over medium-high heat, add olive oil and cook the ground turkey, mushrooms and onions until turkey is browned, about 6 minutes. Add marinara sauce and heat another 2–3 minutes. Remove from heat.
- In another bowl, mix together eggs, Parmesan, ricotta and cottage cheeses.
- In a large, greased, 9 x 13-inch pan, assemble the lasagna. Place 1 layer of meat sauce, then layer with lasagna noodles. Add 1 layer of the cheese mixture, then sprinkle 1 layer of mozzarella. Repeat the layering until all the ingredients are used, finishing with cheese mixture and about 1/2 cup of mozzarella for the top.
- Heat oven to 350 degrees F, cover, and bake for about 40 minutes. Remove cover, and bake for another 5 minutes to lightly brown the cheese. Remove from the oven, and let cool a bit.
- Before serving use a small spoon to carefully make stripes with the remaining sauce. Place chopped olives in the upper left-hand corner of the lasagna to make the "stars" of the flag. Serve immediately, and enjoy!
*Note: You can skip boiling your lasagna noodles simply by soaking them in warm water beforehand or by using a little more sauce than usual.
